I would like to archive - My Documents, then when zipped ftp it to a web disk.
Do I have to setup 2 tasks to do this?
If so, how do I get task 2 to run when task 1 has finished?

No you should configure one task.
Backup mode = "archive"
select source folders and set destination folder to any local folder (It will be used to creating ZIP archive). Then go to "Upload to FTP" panel, set the "Upload created archive to FTP" flag and configure this panel (Server, password, ...).
When this task is running APBackup creates ZIP archive to the "Destination foder" and then copies this archive to FTP server.
